Curry is one of my and hubby’s favourites. But our daughter is not such a fan, as I often report in my recipes 😉 Nowadays she works in the catering industry, so now we eat much more often just the two of us. Often there is a curry or something similar on the table.
I almost always make sure that we eat a lot of vegetables during a meal. Vegetables are the basis of a healthy diet. In this recipe you will find cauliflower and spinach. Both very healthy and full of nutrients. The combination with curry means you don’t have a bland dish and the vegetables are no longer predominant. For those who are not such a fan of vegetables, this is a good ‘solution’. Below you will find my cauliflower curry recipe.

How healthy is spinach?
How do you make this low-carb meal with cauliflower and curry?
Ingredients for 2 people:
- small cauliflower in florets
- 400 grams of fresh spinach
- 2 tablespoons of pecans
- 2 tablespoons of oil
- 2 tablespoons garam masala
- 2 garlic cloves, crushed
- 2 small onions, sliced
- 100 ml. coconut milk
- sambal, salt & pepper to taste
- oil for frying
Boil the cauliflower for about 20 minutes. Then drain it and grab a large wok pan. Add 2 tablespoons of oil there. Coconut oil is my favorite with these kinds of dishes.
Then fry the onion and garlic in the oil until light brown. Add the cauliflower, coconut milk and spices. When it has drawn for about 5 minutes, you can add the spinach until it has shrunk.
In the meantime, you can toast the pecans in a dry frying pan and add them to the cauliflower curry as a topping.
