Healthy recipe: How do you make this delicious, nutritious Thai chicken soup?

Ingredients for 4 people:

  • 4 chicken thighs (fillets)
  • 400 ml. coconut milk
  • 2 stalks Sereh (or alternatively use grated lemon zest)
  • 1 red pepper
  • 3 cm ginger root
  • 750 ml of water
  • 4 tomatoes
  • 400 grams of fresh spinach

Method of preparation Thai chicken soup:

Crush the sereh stems, cut the red pepper and ginger root into small slices. First, remove the seeds from the red pepper.

Bring the coconut milk, sereh, red pepper, ginger root to the boil and let it cook for 2-3 minutes. Then add the water, chicken and tomatoes to the pan. Cut the chicken and tomatoes into small cubes/slices.

Let it all cook for about 20 minutes. When the chicken is cooked, you can add the spinach.

You can eat the soup with, for example, naan bread. a salad or a slice of wholemeal bread. You can also make naan bread yourself, see the (gluten-free) recipe for naan bread here.

Variation tip: replace the spinach with coriander.
