Desserts with lemon 4x – Simple Recipes

The well-known saying: ‘If life gives you lemons, make them lemonade’. Of course fresh lemonade is also delicious, but I would choose to make delicious lemon desserts from the lemons that taste like summer.

// Lemon pudding

Dissolve 90 g starch in 200 ml lemon juice and 800 ml water. Add 250g sugar and cook over medium heat, stirring gently, until boiling. Continue cooking until a viscous mixture and pour into nice dishes. Let cool and then refrigerate for at least four hours.

// Lemon Ice Cream

Lemon sorbet is perhaps the most refreshing thing there is. To make it yourself, peel two lemons. Cut into pieces, removing any seeds. Mix with 200 g sugar and an egg white until the mixture starts to beat. Add the grated zest of a lemon and – keep mixing – 700 gr ice cubes little by little. Serve immediately. For an even fresher taste, add a few basil leaves with the grated zest.

Also make: tiramisu with limoncello lime and cantuccini, a delicious fresh dessert or lemon dessert.

// Yoghurt lemon mousse

This mousse is already delicious, but also great for filling meringues. To prepare it, grate the zest of three lemons and extract the juice. Put the juice and zest in a saucepan with 100 ml of water and start heating over very low heat. Meanwhile, beat three egg yolks with 120 g sugar and 30 g rice starch. When the water and lemon are hot, add 30g butter and stir to melt completely. Gradually pour this into the mixture of egg, sugar and starch and mix well to avoid lumps. Return the cream to the heat and continue to cook until it has completely thickened. Now put it in a bowl and let it cool completely before adding 250 gr Greek yogurt and 50 gr icing sugar. Let the mousse rest in the fridge for a few hours before serving.

// Lemon fudge

Fudge is an American dessert, usually made with chocolate. It is served in small squares, almost as if it were a bonbon. The lemon variant is perfect for the summer and is also made without an oven. To prepare, melt 475 g chopped white chocolate in the microwave or in a bain-marie with 30 g butter and 400 g condensed milk. When the chocolate has completely melted, add the juice and zest of a grated lemon and pour the mixture into a low baking tin lined with baking paper. Refrigerate the fudge overnight before cutting into squares.

Fact: fudge is known as a typical English product, but it actually originated in America. By coincidence and experiments during a cooking class, students wanted to make toffee, but due to a too low temperature of the mixture it failed and the first fudge (which means mistake) was born.
