Do you like hot & fast? Then light the BBQ first or put the grill pan on the fire! You can have these skewers on the table without much fuss. You can make the most delicious combinations with meat, fish or vegetables; from halloumi with peach, salmon with miso to chicken with harissa. To then – completely mellow – drink wine outside the long evening.
These bacon skewers with honey soy marinade are the perfect combination of umami and a hint of sweetness, making them a guaranteed success!

Ingredients
- 80 ml sweet soy sauce (5 tbsp)
- 3 el soy sauce
- 1 el liquid honey
- 800 g pork belly without rind in 3 cm cubes
- 2 spring onions finely chopped
- 1⁄2 red chili pepper finely chopped
- 2 el rice vinegar
- 1 el mirin
- 2 el peanut oil
- coriander finely chopped
- steamed rice for it
- also needed: 8 metal skewers
Instructions

Mix the sweet soy sauce, soy sauce and honey in a saucepan and heat to boiling point. Let it reduce for 8-10 minutes. Remove from heat and let cool. Place the pork belly in a bowl and cover with the cooled marinade. Leave to marinate in the refrigerator for 45-60 minutes.

Meanwhile, place spring onion and chilli in a small bowl and sprinkle generously with sea salt flakes. Add the rice vinegar and mirin and leave for 10-15 minutes. Stir the peanut oil through the spring onion dressing.

Allow the cubes of meat to return to room temperature. Stick 3-4 cubes of meat on each skewer. Place on a plate.

Light the barbecue or heat the grill pan over medium to high heat. Grill the skewers for 8-10 minutes per side until cooked through and caramelised; brush them every 5 minutes with the rest of the marinade.

Place the skewers on a platter and spoon the spring onion dressing over them. Sprinkle with coriander and serve with steamed rice.
